We meet at the nature center on the Maryland side of the Conowingo Dam the second and fourth Saturdays of the month for a one to two hour hike around the Susquehanna river looking for bald eagle nests and other local birds. Come join us. It’s free! You get good exercise, experience nature full on, see beautiful birds, and meet new, interesting people. Many of our members are amateur photographers and will gladly share tips with the aspiring bird photographer. Meetings are rain or shine. Bring binoculars and a water bottle. From the Garden...

Carrot Pancakes So it’s the end of the planting season. You are probably harvesting the last of your carrots and by now, you are probably really sick of carrots. You'’ve had them raw, boiled, steamed, and baked in cakes and breads. Do you need a new recipe? Why not try “Carrot Spice Pancakes?”

You will need:
  • 2 cups sifted self-rising flour
  • 2 cups milk
  • 2 tbsp. vegetable oil
  • 3/4 cup grated carrots
  • 1/2 cup applesauce
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger or 1 tablespoon grated fresh ginger

Directions:
  1. Mix eggs, oil, and milk together with whisk. Add to flour. Stir until combined. Fold in carrots, applesauce, cinnamon, and ginger.
  2. Heat a greased griddle until drops of water sprinkled on it evaporate noisily. Spoon 1/4 cup batter onto the griddle. Flip over with a spatula when bubbles start to form on the top. Cook second side to a golden brown color.
